This recipe will guide you through the ingredients and preparation method to make your own tamarind pulihora that tastes amazing!

- Split urad dal: ¼ cup
- Chana dal (chickpeas): 1 tbsp
- Dry red chilies: 5
- Curry leaves: 1 sprig
- Ginger: 1 inch piece

Preparation Method
- Prepare Tamarind Pulp: Soak the tamarind in warm water and extract the pulp.
- Make the Spice Paste: In a blender, combine mustard seeds, black pepper, ginger, and salt to make a smooth paste.
- Cook the Rice: Wash and cook the rice until fluffy.
- Heat Oil: In a kadai (wok), heat oil and add mustard seeds, fenugreek seeds, and curry leaves. Allow them to crackle.
- Add Tamarind: Once the spices are aromatic, add the tamarind pulp and cook for a few minutes.
- Combine: Stir in the prepared mustard paste and cook for a minute before turning off the heat.
- Mix with Rice: Pour the tamarind mixture over the cooked rice and mix well.
- Prepare Taalam: In another pan, heat ¼ cup oil and add mustard seeds. Once they crackle, add chickpeas, black pepper, curry leaves, and dry red chilies. Sauté until golden.
- Final Touch: Add the Taalam to the pulihora rice and mix thoroughly.
Optional: For added richness, you can use ghee instead of oil. Drizzle some ghee over the rice before serving for an extra layer of flavor.
