Are you a fan of sweets, especially those that tantalize your taste buds with a burst of flavor and color? If so, you’ll love the delightful Pineapple Kesari, a popular South Indian sweet that is a staple at weddings and special events.
Ingredients:
- Water – 1 cup
- Ghee – ¼ cup
- Chopped almonds – 1 tbsp
- Raisins – 1 tbsp
- Cashew – 1 tbsp
- Suji Rava – ½ cup
- Saffron flower – eight petals
- Sugar or powdered sugar – ½ cup
- Cardamom powder – a pinch
- For yellow color:
- Milk – one spoon
- Turmeric – a pinch
How to Make Pineapple Kesari:
- Heat a pan and add 1 tbsp of ghee. Fry the rava in the ghee until light golden. Remove the fried rava from the pan and set it aside.
- In the same pan, add the chopped pineapple pieces and cook until softened. Remove and set aside.
- In another pan, bring water to a boil. Add saffron petals and sugar, stirring until dissolved. Add the pineapple pulp to the sugar syrup and cook for a few minutes.
- Reduce the flame and slowly add the fried rava to the mixture, stirring continuously to avoid lumps. Cook until the mixture thickens.
- Mix turmeric with milk and add it to the mixture.
- In a separate pan, fry almonds, cashews, and raisins in ghee until golden brown. Add them to the cooked mixture along with ghee.
- Cook the pineapple saffron mixture on low flame for five more minutes. Finally, add cardamom powder.
- Your delicious Pineapple Kesari is now ready to be savored!
