Try This Nutritious Fenugreek Pulagam Recipe for a Healthy Breakfast or Dinner

If you’re looking for a wholesome, flavorful dish that works equally well for breakfast, lunch, or dinner, this Fenugreek Pulagam is a must-try. It’s not only delicious but also packed with health benefits, especially valuable for growing kids. This special recipe is an excellent option for those observing a vegetarian diet during Kartika, the holy month dedicated to Lord Shiva.


Ingredients Required:

  • Rice – 1 cup
  • Fenugreek seeds (methi) – 1 teaspoon
  • Salt – to taste
  • Whole spices – a few (like bay leaf, cardamom, cinnamon stick, and cloves)
  • Pepper – a few whole peppercorns
  • Green chilies – 2, slit
  • Tomato – 1, diced
  • Onion – 1, finely chopped
  • Oil – 1 teaspoon
  • Ghee – 1 teaspoon (optional, for extra flavor)
  • Coriander leaves – a handful, chopped
  • Optional garnish: Cashews fried in ghee

Preparation Method:

  1. Soak the Rice
    Wash the rice thoroughly and soak it in water for about an hour. This helps the rice cook faster and absorb flavors better.
  2. Prepare the Cooker
    In a pressure cooker, add a small amount of ghee and oil. Add whole spices like bay leaf, cardamom, cinnamon stick, and cloves, and fry briefly to release their aroma.
  3. Saute Vegetables and Spices
    Add a bit of curry powder, green chilies, and peppercorns, and sauté. Next, add the chopped onions and diced tomato. Fry until the vegetables soften, and add chopped coriander for freshness.
  4. Combine Ingredients
    Add the soaked rice, fenugreek seeds, salt, and a pinch of turmeric. Stir everything together so the rice is well-coated with spices.
  5. Cook in the Pressure Cooker
    Add enough water to cover the ingredients (usually about twice the amount of rice) and close the lid. Cook on medium heat for about three whistles.
  6. Serve the Pulagam
    Once the pressure releases, open the lid, fluff the rice, and serve hot. For extra flavor, garnish with cashews fried in ghee.
