Ingredients for Munagaku Rice:
- 1 cup Barley (optional, for a healthier twist)
- 1 cup Rice
- 1/4 cup Cashews
- 1 Onion, finely chopped
- 2-3 Green Chillies, slit
- Fresh Coriander, chopped
- A few Curry Leaves
- 5-6 Garlic Cloves, crushed
- 2 Dry Red Chillies
- 1 tsp Cumin Seeds
- 1 tsp Sesame Seeds
- 1 tsp Coriander Seeds
- 1/2 tsp Cumin Powder
- 1/2 tsp Chilli Powder
- Salt, to taste
- 1 tbsp Oil
- 1 tbsp Ghee
How to Prepare Munagaku Rice:
- Prep the Munaga (Moringa) Leaves:
Wash the Munaga leaves thoroughly, removing any dirt. Dry them completely so there’s no excess moisture left. - Cook the Rice:
Cook the rice (you can also use barley for an added health benefit) and set it aside. Ensure the rice is cooked well but not too mushy. - Prepare the Masala:
Heat a kadai (wok) and add some oil. Once the oil is hot, add dry red chillies, sesame seeds, cumin seeds, coriander seeds, and crushed garlic. Sauté them for a few minutes until fragrant. - Fry the Munagaku:
Add the Munagaku leaves to the kadai and fry them well until they soften and blend with the spices. - Make the Powder:
After the Munagaku has been fried, mix the roasted ingredients (garlic, cumin, sesame, coriander seeds, dry chillies) and grind them into a coarse powder. - Combine Everything:
In the same kadai, add some ghee and oil. Then add curry leaves, cashews, and onions, and fry until the onions are golden brown. Now, add the previously ground powder and mix well. - Add Rice and Spice it Up:
Add the cooked rice into the kadai and stir everything together. Sprinkle cumin powder, chilli powder, and salt to taste. Mix thoroughly to ensure the rice is evenly coated with the spices. - Finish with Coriander:
Fry the rice for a couple of minutes on high flame, then garnish with freshly chopped coriander leaves. - Serve:
Your Munagaku Rice is now ready! Serve it hot for the best taste. It makes for a healthy and flavorful lunch that’s perfect for kids’ lunchboxes.
Conclusion:
Munagaku Rice is a delightful and nutritious meal that is quick to prepare and packed with health benefits. It’s a great way to include the goodness of Munaga (Moringa) in your diet while also keeping your family happy and satisfied. Serve it for lunch or as a side dish, and watch your family enjoy the tasty and wholesome flavors!
