Delicious and Easy Onion Soup Recipe – Perfect with Hot Rice

Onion Soup is a simple yet incredibly flavorful dish that is quite popular in Andhra Pradesh. It’s a perfect solution when you’re in need of something quick, tasty, and satisfying, especially when you don’t have much in the pantry. This soup, made with onions and a few spices, can be prepared in no time and is delicious when paired with hot rice, parathas, or chapatis.   • 4 medium-sized Onions, finely chopped
  • 2-3 Green chillies, slit
  • A few Curry leaves
  • 1 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • 2-3 Dry red chillies
  • 1 tbsp Oil
  • 1-2 Fresh chillies (optional for extra spice)
  • 1/4 tsp Turmeric powder
  • Salt to taste
  • 1 tbsp Ginger garlic paste
  • 1 tsp Garam masala
  • 1 tbsp Tamarind juice
  • Fresh Coriander for garnish

Method to Prepare Onion Soup:

  1. Heat the Oil:
    Begin by heating a pan and adding oil to it. Once the oil is hot, add mustard seeds, cumin seeds, and dry red chillies. Fry them for a few seconds until they start to pop.
  2. Add Curry Leaves and Onions:
    Next, add the curry leaves, followed by the finely chopped onions and green chillies. Stir the mixture well and sauté for a few minutes until the onions turn golden brown and soft.
  3. Add Ginger Garlic Paste:
    Now, add the ginger garlic paste to the pan and sauté until it releases its aroma and turns a bit golden.
  4. Spices and Water:
    Add the chilli powder, turmeric, salt, and garam masala to the pan. Stir well. Then, pour in water (about 2-3 cups) and bring it to a boil.
  5. Tamarind Juice:
    After the water starts boiling, add the tamarind juice to the soup and let it simmer for a few more minutes.
  6. Final Touches:
    When the soup reaches a boil and the oil starts floating on top, sprinkle fresh coriander leaves for added flavor and color.
  7. Serve:
    Once ready, remove from heat. The Onion Soup is now ready to be served. It’s best enjoyed with hot rice, but can also be served with parathas or chapatis.
