Discover the Delight of Homemade Pineapple Kesari: A Sweet South Indian Treat

Are you a fan of sweets, especially those that tantalize your taste buds with a burst of flavor and color? If so, you’ll love the delightful Pineapple Kesari, a popular South Indian sweet that is a staple at weddings and special events.

Ingredients:

  • Water – 1 cup
  • Ghee – ¼ cup
  • Chopped almonds – 1 tbsp
  • Raisins – 1 tbsp
  • Cashew – 1 tbsp
  • Suji Rava – ½ cup
  • Saffron flower – eight petals
  • Sugar or powdered sugar – ½ cup
  • Cardamom powder – a pinch
  • For yellow color:
    • Milk – one spoon
    • Turmeric – a pinch

How to Make Pineapple Kesari:

  1. Heat a pan and add 1 tbsp of ghee. Fry the rava in the ghee until light golden. Remove the fried rava from the pan and set it aside.
  2. In the same pan, add the chopped pineapple pieces and cook until softened. Remove and set aside.
  3. In another pan, bring water to a boil. Add saffron petals and sugar, stirring until dissolved. Add the pineapple pulp to the sugar syrup and cook for a few minutes.
  4. Reduce the flame and slowly add the fried rava to the mixture, stirring continuously to avoid lumps. Cook until the mixture thickens.
  5. Mix turmeric with milk and add it to the mixture.
  6. In a separate pan, fry almonds, cashews, and raisins in ghee until golden brown. Add them to the cooked mixture along with ghee.
  7. Cook the pineapple saffron mixture on low flame for five more minutes. Finally, add cardamom powder.
  8. Your delicious Pineapple Kesari is now ready to be savored!
