Maddur Vadalu: A Crispy Delight from Karnataka for Diwali

  • Fresh Coriander, chopped
  • A few Curry Leaves
  • A pinch of Asafoetida (Hing)

How to Make Maddur Vadalu:

  1. Prepare the Dough:
    In a large mixing bowl, add rice flour, maida flour, and upma rava. Mix well. Then, add finely chopped onions, green chilies, coriander, curry leaves, asafoetida, and salt. Mix all the ingredients thoroughly to form a dough. The consistency should be similar to chapati dough. If needed, add a little water to get the right texture.
  2. Rest the Dough:
    Cover the dough and let it rest for about 30 minutes. This helps the flavors blend well.
  3. Heat the Oil:
    In a deep frying pan or kadhai, heat enough oil for deep frying on medium heat.
  4. Shape the Vadalu:
    Take small portions of the dough and roll them into small balls. Flatten them gently with your palms to form round, thick discs (about the size of a small cookie).
  5. Fry the Maddur Vadalu:
    Once the oil is hot, carefully slide the flattened dough into the oil. Fry them in batches, making sure not to overcrowd the pan. Fry until they turn golden brown and crispy on both sides. It should take about 3-4 minutes per batch.
  6. Serve Hot:
    Remove the fried Maddur Vadalu from the oil and drain excess oil on a paper towel. Serve hot, and enjoy the crispy, flavorful vadalu!

Serving Suggestions:
Maddur Vadalu are delicious on their own but can also be paired with chutneys like palli (peanut) chutney, mint chutney, or coconut chutney for extra flavor.
