In addition to onion pakodis, other varieties like eggplant, tomato, and mixed vegetable pakodis are equally delightful.

If you’re a fan of mixed vegetable pakodis, here’s a quick rundown of the ingredients you’ll need:

  • Chickpea flour
  • Turmeric
  • Asafoetida
  • Fenugreek
  • Chilli
  • Salt
  • Vegetables of your choice
  • Oil
  • Ginger garlic paste
  • Coriander
  • Curry leaves
  • Fine green chillies

To prepare these mouthwatering pakodis, follow these simple steps:

  1. Take a big bowl and mix all the cut vegetables with chickpea flour, turmeric, asafoetida, cumin, chilli, salt, ginger garlic paste, coriander, curry powder, thin green chillies.
  2. Add a little water to form a batter of desired consistency.
  3. Heat oil in a kadai for deep frying.
  4. Once the oil is hot, carefully drop the pakodis into the oil and fry until golden brown.
  5. Remove the fried pakodis onto a plate lined with tissue paper to absorb excess oil.
  6. Serve the crispy mixed vegetable pakodis with your favorite sauce and enjoy!
