For every foodie, Pulihora holds a special place in their heart. Especially when you have leftover rice from the previous night, transforming it into pulihora is a delightful way to repurpose it. While the flavor of temple offerings is unique and often irreplaceable, you can create a delicious version at home with just a few simple tricks.

This recipe will guide you through the ingredients and preparation method to make your own tamarind pulihora that tastes amazing!

Ingredients

For the Rice:

  • Rice: 250 grams
  • Oil: ¼ cup (preferably sesame or groundnut oil for sweetness)
  • Curry leaves: 2 sprigs
  • Green chilies: 3
  • Turmeric: 1 tsp
  • Salt: to taste
  • Tamarind: 50 grams

For the Taalam (Tempering):

  • Oil: ¼ cup
  • Mustard seeds: ½ tsp
  • Split urad dal: ¼ cup
  • Chana dal (chickpeas): 1 tbsp
  • Dry red chilies: 5
  • Curry leaves: 1 sprig
  • Ginger: 1 inch piece
  • Salt: to taste

Preparation Method

  1. Prepare Tamarind Pulp: Soak the tamarind in warm water and extract the pulp.
  2. Make the Spice Paste: In a blender, combine mustard seeds, black pepper, ginger, and salt to make a smooth paste.
  3. Cook the Rice: Wash and cook the rice until fluffy.
  4. Heat Oil: In a kadai (wok), heat oil and add mustard seeds, fenugreek seeds, and curry leaves. Allow them to crackle.
  5. Add Tamarind: Once the spices are aromatic, add the tamarind pulp and cook for a few minutes.
  6. Combine: Stir in the prepared mustard paste and cook for a minute before turning off the heat.
  7. Mix with Rice: Pour the tamarind mixture over the cooked rice and mix well.
  8. Prepare Taalam: In another pan, heat ¼ cup oil and add mustard seeds. Once they crackle, add chickpeas, black pepper, curry leaves, and dry red chilies. Sauté until golden.
  9. Final Touch: Add the Taalam to the pulihora rice and mix thoroughly.

Optional: For added richness, you can use ghee instead of oil. Drizzle some ghee over the rice before serving for an extra layer of flavor.

Enjoy!

Your homemade pulihora is now ready to be served! This simple yet flavorful dish is perfect for lunch or dinner and can be enjoyed with raita or pickles. Embrace the delightful taste of tamarind pulihora and impress your family with your cooking skills!
